In an attempt to organize all my recipes and share them with fellow cooks and bakers, I've started a blog. Initially my recipes were a collection from friends, family, cookbooks, magazines and yes, even newspapers! Now many of my recently acquired recipes are adapted from blogs and cooking show websites.

Glazed Turkey Meatloaf


Meatloaf:

1 lb ground turkey
½ breadcrumbs
1 egg
1 small onion, finely chopped
1/2 small red or green pepper, chopped
3 tbsp ketchup
salt and pepper to taste

Glaze:

3 tbsp. brown sugar
¼ cup ketchup

Preheat oven to 350 degrees.  In a large bowl, combine breadcrumbs and turkey and mix well. Stir in the remaining ingredients. Transfer mixture to a 9x5x3-inch loaf pan. Bake for 40 minutes.  Spread the combined brown sugar and ketchup over the top of the meatloaf. Bake for an additional 20 minutes. Let the meatloaf sit for 5 minutes before slicing.

Turkey Sloppy Joes


1 tsp oil
1 small onion, diced
1 red bell pepper, finely diced
1 lb. ground turkey
Salt and pepper
½ cup ketchup
¼ cup BBQ sauce (recommended: Stubb’s Original)
½ tbsp Worcestershire sauce
½ tbsp red vinegar

Add oil to  skillet and place over medium high heat. Add the onion and bell pepper; saute for 5 minutes or until onion is translucent. Transfer ingredients to a small bowl.

Add ground turkey to skillet and season with salt and pepper; break up meat as it cooks. Once turkey is cooked, add the onion/bell pepper mixture back in. Then add ketchup, bbq sauce, Worcestershire, and vinegar. Sir well to combine and bring to a simmer. Reduce heat to low and cook for 10 minutes longer. If sauce looks too thick, add a tbsp water.

Serve on hamburger buns. Or serve over elbow macaroni.

Optional: Add ½ cup shredded pepper jack cheese to skillet just before serving; cover with a lid until cheese is melted.

Roasted Turkey Breast Tenderloins and Vegetables

Turkey tenderloins are combined with carrots, celery and onions for a quick and  easy meal. A high quality ready made turkey gravy makes the dish even easier. Trader Joe’s has one but unfortunately it’s not available year round.


2 tsp dried thyme
Salt and pepper, to taste
¼ cup melted butter
2 cups sliced carrots
3 celery ribs, cut into 2-inch pieces
2 medium onions, cut into wedges
1 tbsp olive oil
2 turkey breast tenderloins


Preheat oven to 425 degrees. Combine 1 tsp dried thyme, salt and pepper with melted butter; toss with vegetables. Transfer to a roasting pan. Bake, uncovered, for 15 minutes.


Meanwhile, rub oil over turkey; sprinkle with 1 tsp dried thyme, salt and pepper. Move vegetables to edges of pan; place turkey in the center. Bake, uncovered, 20-25 minutes or until a thermometer inserted in turkey reads 165 degrees.

If desired, pour cooking juices into a small pan. Combine 2 tsp cornstarch with ¼ cup water until smooth; gradually stir in pan. Bring to a boil; cook and stir for 2 minutes or until thickened

Turkey Meatballs

I found this recipe in one of those cookbooks you see at the checkout counter in the supermarket -"Pillsbury Great Fast Meals" dated 1987.  The recipe has withstood the test of time. 

MEATBALLS
1 lb. ground turkey
½ cup dry bread crumbs
2 tbsp. finely chopped onion
1 egg
salt and pepper to taste

SAUCE
1 cup catsup
¾ cup water
¼ cup firmly packed brown sugar
¼ cup vinegar
2 tbsp. minced onion
2 tsp. Worcestershire sauce

Preheat oven to 350 degrees. Line a large baking pan with foil and spray with cooking spray. Combine the ground turkey, breadcrumbs, onion, egg and salt and pepper. Gently mix, just to combine ingredients, Form into small balls. Place meatballs on cookie sheet. Bake until cooked through, about 25 minutes.

While meatballs are baking combine sauce ingredients.  Microwave on HIGH for 3 to 4 minutes or until vigorously boiling, stirring once during cooking.  Set aside.

When meatballs are fully cooked, add to sauce and microwave on HIGH for 3 to 5 minutes or until thoroughly heated, stirring once halfway through cooking.  Serve over noodles, couscous or rice.

Variation:  Hot and Spicy Meatballs
Add ½ tsp. prepared horseradish and 3 drops hot pepper sauce to meatball mixture; add 3 drops hot pepper sauce to sauce mixture.
