1¼ cups flour
1 tsp baking soda
½ tsp cinnamon
4 tbsp butter, at room temperature
½ cup light brown sugar, packed
¼ cup sugar
1 tsp vanilla
1 large egg, at room temperature
1 large banana (about ½ cup mashed)
2 cups old-fashioned oats
1 cup semisweet chocolate chips (or ½ cup milk chocolate and ½ cup semisweet)
Preheat oven to 350 degrees. Line two baking sheets with parchment. Set aside.
In a medium bowl, whisk together flour, baking soda and cinnamon. Set aside.
In a large bowl, combine butters and sugars, mix until smooth. Add in egg and vanilla. Next, add the mashed banana and mix until combined.
Slowly add in the flour mixture and mix on low until just combined. Stir in oats and chocolate chips.
Form cookie dough into balls, using about 2 tbsp of dough per cookie. Place cookies on prepared baking sheets, about 2 inches apart. Bake for 12 minutes or until golden around the edges but still soft in center. Remove from oven and let the cookies sit on the baking sheet for about 5 minutes. Transfer the cookies to a cooling rack and cool completely. These cookies freeze well.
Makes 20 cookies.
