In an attempt to organize all my recipes and share them with fellow cooks and bakers, I've started a blog. Initially my recipes were a collection from friends, family, cookbooks, magazines and yes, even newspapers! Now many of my recently acquired recipes are adapted from blogs and cooking show websites.

Coconut-Oatmeal Krispies

1 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 cup butter (2 sticks), softened
¾ cup sugar
¾ cup packed brown sugar
2 tsp vanilla
2 large eggs
2 cups old-fashioned oats, uncooked
2 cups Rice Krispies
1 cup sweetened flaked coconut


Preheat oven to 350 degrees. Grease large cookie sheet (or line with parchment paper). On waxed paper, combine flour, baking powder, and baking soda.


In large bowl, with mixer on medium speed, beat butter and sugars until creamy, about 2 minutes. On low speed, beat in vanilla, then eggs, one at a time, beating well after each addition. Gradually add flour mixture; beat just until blended. With spoon, stir in oats, cereal, and coconut.


Drop dough by rounded tablespoons, 3 inches apart, onto prepared cookie sheet. Bake until tops  are golden, 11 to 13 minutes. With wide metal spatula, transfer cookies to wire rack to cool completely. Repeat with remaining dough.
